GREEN MOJO SAUCE
ONE TYPICAL TASTE FROM THE CANARY ISLANDS
At home, we are huge fans of different types of sauces, but the green mojo sauce is one of our favorites and is extremely easy to prepare. This sauce comes from the Canary Islands, where you will find it in every restaurant, home and of course, food/ souvenir store!
On the Canary islands exist many types of mojos, but the most commons are green mojo and red mojo.
The mojo is a sauce that you can accompany with papas arrugadas (wrinkled potatoes – typical from the islands), any type of veggies, bread, arepas, and even meats if you want to. In other words, EVERYTHING!

THE GREEN MOJO SAUCE RECIPE.
We don’t think we can repeat it more times. This sauce is delicious, fast, and easy to prepare. If you have already the ingredients, it may take you 5 to 10 minutes top to make it.
When we do it at home, we prepare the double… and sometimes triple because we already know how little it lasts inside the fridge. Also for sharing or exchange it with friends.
You can adapt it according to your taste. Spicy, non-spicy, more oily, more garlicky. Is pretty versatile.
The Recipe.
For this delightful green mojo sauce you will need:
Ingredients:
- 1 coriander tying (MUST be fresh)
- 8 black pepper seeds
- a pinch of salt
- 4 garlic cloves (we use way more than this)
- 40 ml apple vinegar
- 125 ml olive oil
Materials:
- measuring cups/ spoons
- 1 blender
- 1 airtight glass jar
Put inside the blender the pepper, salt, garlic cloves, and vinegar. Blend until there is uniformity; add the slightly cut coriander and the oil. Blend until the sauce looks smooth.
Don’t forget to store it properly closed inside of the fridge. It can last up to 15 days and more inside of the fridge. But if you are a sauce lover likes us, give it 3 – 4 days maximum 😀
